Hummus
This super simple treat is one of my favorite go-to dishes. It takes no time to make and is loaded with healthy ingredients. And besides being quite economical, it’s -bonus! -very kid friendly! I’ve yet to meet a kid that does not like hummus, which makes it a terrific fix when your little one is struggling with eating veggies.
One can of garbanzo beans-drained, liquid reserved
1 lemon – juiced
1 teaspoon of minced garlic
1/4 teaspoon cumin
1 teaspoon of dried oregano or parsley flakes
1 teaspoon sesame oil
2 teaspoons of olive oil
Pinch of salt
1/4 cup of canning liquid -more or less depending on how you prefer the consistency.
Combine all ingredients in a blender and purée until smooth. Add more or less of the canning liquid to get the consistency you desire.
Get creative and add sun dried tomatoes, olives, or whatever you like to change up the flavor of this delicious Mediterranean dish. Serve with pita chips or fresh veggies for a tasty healthy snack, appetizer or even side dish with meals.
