Cream of Cauliflower Soup
Every time I make this soup for friends, I have to write down the recipe for them. The best thing about this -other than the amazing flavor, is that it is ridiculously easy to make, whether you are a seasoned cook or all thumbs in the kitchen. Cauliflower not your thing? Trust me, after trying this soup, it will be!
2 strips of bacon cut into small pieces
1 small (or 1/2 medium) onion
1 head of cauliflower chopped into 2 inch pieces
2-3 cups of chicken stock (the amount you use will depend on the size of your cauliflower)
1/4 cup shredded cheese -you choose the type, I like a Mexican blend or a sharp cheddar
In a large pot, render the bacon pieces until crispy. Remove with a slotted spoon and place on paper towels to drain.
In the rendered bacon fat, cook the onion until it is translucent. Add the chopped cauliflower to the onions and bacon fat and cook for 3-4 minutes stirring constantly to avoid burning the cauliflower. Add enough chicken stock to just cover the top of the cauliflower. Bring to a boil, then reduce heat to medium and cover. Let cook until the cauliflower is fork tender -approximately 10-12 minutes.
Using an immersion blender in the pot, (or you can transfer to a stand up blender) blend the cauliflower until it is completely smooth. If the soup is thicker than you like, add some more of the chicken stock until you reach the desired consistency. At this point, add the shredded cheese and mix well.
Your soup is finished! Plate in your favorite bowl or soup mug, and top with the crispy bacon bits. This soup is so delicious, it’s hard to believe it’s healthy! Enjoy!
