Season 2 of the most popular cooking show in Virginia is here! Are you having a tough time getting enough veggies into your family’s diet? We are on the last step of our vegetable voyage. Surely you’ve heard of veggie burgers and black bean burgers, but on this segment, Karen shows you how to make Spinach Burgers! They’re great because they have a lot of iron and are loaded with fiber, take no time to make, and are absolutely delicious!

Spinach Burgers

Spinach burgers might sound a bit odd, but they are so very tasty!  With just a handful of ingredients, they area cinch to make and are ready in about 15 minutes. And talk about healthy….? Pop-Eye would be going crazy if he knew about these.

1 16 oz package of frozen spinach thawed
1/2 cup shredded cheese -mixed blends are good as is gouda
1/4 cup onions finely diced
3/4 cup bread crumbs
1 tsp garlic salt
2 egg whites and 1 egg beaten together

Take thawed spinach and using all of your muscles squeeze all -or as much as you can- of the water out.  Using your fingers, take the crazy small clump of spinach that you have created and separate and “fluff” it out in a medium sized bowl.  To the spinach add the rest of the ingredients -the cheese, onions, bread crumbs, garlic salt and egg/egg white mixture.  Using your hands -don’t be afraid to get a little messy- combine all the ingredients until they are uniformly mixed.
Once mixed, shape into 4 large or 6 medium sized burgers (or you can even make little sliders!).
Heat a non-stick frying pan to medium high and spray with cooking spray (I prefer olive oil cooking spray).  Place burgers on pan and cook on each side for about 4 minutes.

Feel free to customize the toppings to your heart’s content, but for me, in this recipe, less is more.  I love to serve them on a nice whole grain bun with a touch of mayo and a fresh ripe tomato for a beautiful, colorful and healthy meal.
